Directions

1. Peel and grate ginger root. Chop walnuts. Beat egg.
2. Pre-heat oven to 175?C.
3. In a bowl, combine brown sugar, ground cinnamon, salt, all purpose flour, baking soda, ginger root, baking powder and nutmeg.
4. In another bowl, stir vanilla extract, molasses, vegetable oil, honey, tomato puree and egg.
5. Pour liquids over flour mixture.
6. Mix everything until it comes together.
7. Fold in walnuts and raisin.
8. Put dough into a loaf pan.
9. Bake loaf for 50 minutes.
