Directions

1. Peel and mash banana. Cut butter into pieces. Shred zucchini.
2. Pre-heat oven to 175?C.
3. In a bowl, cream butter with sugar.
4. Add egg, ground cinnamon, zucchini, nutmeg, all purpose flour, baking powder, baking soda, buttermilk, lemon zest, banana, salt and vanilla extract.
5. Mix everything until it comes together.
6. Put dough into a loaf pan.
7. Bake loaf for 55 minutes.
