Directions

1. Chop walnuts. Melt margarine. Beat egg white. Shred zucchini. Peel and shred carrot.
2. Pre-heat oven to 175?C.
3. In a bowl, cream margarine with brown sugar substitute.
4. Add egg white, baking powder, salt, sucralose, ground cinnamon, carrot, whole wheat flour, nutmeg, applesauce, zucchini, baking soda and vanilla extract.
5. Mix everything until it comes together.
6. Fold in walnuts.
7. Put dough into a loaf pan.
8. Bake loaf for 45 minutes.
