Directions

1. Chop pecan. Beat egg. Grate zucchini.
2. Pre-heat oven to 175?C.
3. In a bowl, combine pecan, baking soda, sugar, ground cinnamon, coconut, zucchini and all purpose flour.
4. In another bowl, stir egg, vanilla extract and vegetable oil.
5. Pour liquids over flour mixture.
6. Mix everything until it comes together.
7. Put dough into a loaf pan.
8. Bake loaf for 60 minutes.
