Directions

1. Peel and mash banana. Slightly beat egg. Grate zucchini.
2. Pre-heat oven to 175?C.
3. In a bowl, combine zucchini, sugar, ground cinnamon, salt, baking powder, baking soda and all purpose flour.
4. In another bowl, stir banana, lemon juice, vegetable oil, vanilla extract and egg.
5. Pour liquids over flour mixture.
6. Mix everything until it comes together.
7. Fold in blueberries.
8. Put dough into a loaf pan.
9. Bake loaf for 60 minutes.
