Directions

1. Dice bacon and potato. Shred cheddar cheese. Chop onion, carrot and celery.
2. In a saucepan, saute onion, bacon, carrot and celery in olive oil over medium heat for 4 minutes.
3. Add cayenne pepper, chicken stock, potato and salt. Boil for 15 minutes over medium heat.
4. Add cheddar cheese. Stir until well combined over medium heat.
5. Ladle soup into a glass bowl.
