Directions

1. Chop sweet onion. Slice celery rib and carrot. Cut mushroom into strips.
2. In a pot, saute sweet onion in butter over medium heat until caramelized.
3. Add celery rib, mushroom and carrot. Heat for 5 minutes over medium heat.
4. Add fresh thyme and beef stock. Simmer for 45 minutes over medium heat.
5. Add sherry. Stir before serving over medium heat.
6. Ladle soup into a glass bowl.
