Directions

1. Finely chop onion.
2. In a pot, saute rice and onion in olive oil.
3. Add salt and water. Bring to a boil.
4. Stir in fresh spinach.
5. Cover and cook for 15 minutes over low heat.
6. Fluff rice with a fork.
