Directions

1. Dice bacon and potato. Chop celery, carrot and onion. Shred cheddar cheese.
2. In a saucepan, saute celery, bacon, carrot and onion in olive oil over medium heat for 4 minutes.
3. Add chicken stock, cayenne pepper, salt and potato. Boil for 15 minutes over medium heat.
4. Add cheddar cheese. Stir until well combined over medium heat.
5. Ladle soup into a glass bowl.
