1. Cut red potato in half.
2. In a saucepan, cook red potato in water with salt over medium heat until tender.

vinaigrette

3. Peel and mince raw garlic.
4. In a bowl, whisk lemon juice, salt, ground black pepper, dried oregano, dried tarragon, dijon mustard, vinegar, raw garlic and vegetable oil.
