Directions

1. Thinly slice roma tomato and romaine lettuce. Dice roasted bell pepper. Slice fresh spinach. Peel and thinly slice red onion.
2. In a serving platter, place fresh spinach, roma tomato, red onion, roasted bell pepper and romaine lettuce.

vinaigrette

3. Chop fresh mint.
4. In a food processor, add fresh mint, vinegar, frozen concentrated pineapple juice, olive oil, salt and ground black pepper.
5. Process mixture until smooth.

garnish

6. Peel, pit and mash avocado.

serve

7. Garnish with tortilla chips.
8. Top with avocado.
