1. Slice fresh spinach. Peel and thinly slice red onion. Dice roasted bell pepper. Thinly slice romaine lettuce and roma tomato.
2. In a serving platter, place romaine lettuce, roasted bell pepper, red onion, fresh spinach and roma tomato.

vinaigrette

3. Chop fresh mint.
4. In a food processor, add salt, vinegar, olive oil, frozen concentrated pineapple juice, ground black pepper and fresh mint.
5. Process mixture until smooth.

6. Peel, pit and mash avocado.
